These are the dependable basket rolls: soft, lightly enriched, and baked close enough to develop tender pull-apart sides. The dough is strong enough to shape neatly but soft enough to stay pleasant after it cools.

Fresh-milled rule: Hold back the final portion of liquid until after the flour rests. Bran absorbs slowly, and freshly milled grain varies from batch to batch.

Method

  1. Combine both flours with 290 g milk and the egg. Rest 20 minutes.
  2. Add honey, butter, salt, and yeast. Mix 7–9 minutes, adding reserved milk only if needed.
  3. Bulk ferment until 60–75% larger, about 60–90 minutes.
  4. Grease a 9×13-inch pan. Divide into twelve pieces of about 80 g and shape each into a tight ball.
  5. Arrange three by four in the pan. Cover and proof until the rolls touch and look very puffy, 40–65 minutes.
  6. Bake at 375°F for 20–24 minutes, to 195°F in a center roll.
  7. Brush lightly with melted butter and cool at least 20 minutes before separating.

Make it well

Tight shaping creates height; cup your hand around each piece and drag it against the counter.

Do not flour the shaping surface heavily—the dough needs a little friction to tighten.

Rewarm at 300°F for 6–8 minutes, loosely covered.
