
Rye behaves differently from wheat: pentosans, not gluten strength, control much of the structure. Handle it with wet hands, respect its long cooling time, and let flavor lead.
Ingredients
- 180 g coarsely cracked fresh-milled rye
- 700 g water
- 250 g whole milk
- 4 g salt
- 1 apple, thinly sliced
- 60 g toasted walnuts
- Maple syrup and cinnamon to serve
Method
- Bring water and salt to a boil. Whisk in cracked rye.
- Reduce to low and simmer 25–35 minutes, stirring often.
- Add milk and cook 8–12 minutes more until creamy and tender.
- Rest covered 5 minutes.
- Serve with apple, walnuts, cinnamon, and maple to taste.
