Einkorn rewards gentle mixing and modest expectations. Its gluten is extensible rather than strong, so it shines in tender bakes and carefully supported pan loaves.
Ingredients
- 250 g fresh-milled einkorn flour
- 25 g sugar or honey
- 8 g baking powder
- 3 g baking soda
- 5 g salt
- 360 g buttermilk
- 2 large eggs
- 40 g melted butter
Method
- Whisk flour, leaveners, and salt.
- Whisk buttermilk, eggs, sweetener, and butter separately.
- Fold wet into dry just until no dry pockets remain. Rest 10 minutes.
- Cook on a lightly greased 350–375°F griddle, using about ¼ cup batter each.
- Flip when bubbles hold open and edges look matte; cook the second side briefly.
Grain-specific notes
A few lumps are desirable; aggressive whisking makes einkorn pancakes gummy.
If batter thickens during the rest, loosen with 1–2 tablespoons buttermilk.
