Emmer is earthy, substantial, and especially useful when the grain itself should be noticed—from pasta and pastry to muffins and cooked-berry bowls.
Ingredients
- 280 g fresh-milled emmer flour
- 8 g baking powder
- 3 g baking soda
- 5 g salt
- 4 g cinnamon
- 2 eggs
- 180 g yogurt
- 100 g maple syrup
- 80 g melted butter
- 180 g diced apple
- 80 g toasted walnuts
Method
- Heat oven to 375°F and line a muffin pan.
- Whisk dry ingredients. Whisk eggs, yogurt, maple syrup, and butter separately.
- Fold wet into dry, then add apple and walnuts.
- Rest 8 minutes and divide among twelve cups.
- Bake 20–24 minutes.
Grain-specific notes
Cut apples small so the muffins hold together.
Emmer makes a hearty crumb; avoid overbaking.
