Einkorn rewards gentle mixing and modest expectations. Its gluten is extensible rather than strong, so it shines in tender bakes and carefully supported pan loaves.
Ingredients
- 280 g fresh-milled einkorn flour
- 6 g baking soda
- 4 g salt
- 2 g cinnamon
- 340 g very ripe mashed banana
- 100 g brown sugar or maple sugar
- 2 eggs
- 90 g melted butter
- 80 g plain yogurt
- 90 g toasted chopped walnuts
Method
- Heat oven to 375°F and line a 12-cup muffin pan.
- Whisk flour, soda, salt, and cinnamon.
- Whisk banana, sugar, eggs, butter, and yogurt.
- Fold dry into wet, then fold in walnuts. Rest 5 minutes.
- Divide evenly and bake 18–22 minutes, until the centers spring back.
Grain-specific notes
Do not beat after adding flour. Einkorn quick breads become sticky when overworked.
Fill cups nearly full for a good crown.
