The short answer

Use fresh-milled flour unsifted when maximum whole-grain character and nutrition are the goal. Lightly sift when you want a somewhat taller, softer loaf or when your mill leaves especially large bran flakes. Weigh everything you remove, record the amount, and either return it after soaking or use it in another food. A sieve cannot turn home-milled flour into commercial white flour, but it can make the dough easier to manage.

The old miller's question was not simply “whole wheat or white?” Flour has always existed along a range of extraction rates. Home bakers can use that same practical idea: keep the whole grain, remove only the coarsest fraction, or create a lighter high-extraction flour.

What sifting actually changes

Fresh flour contains endosperm, germ, and bran. A sieve separates mainly by particle size, not by anatomy. Large flakes caught in the sieve are bran-rich, but they may also hold some endosperm and germ. Fine bran can still pass through. That is why “I sifted it” is incomplete information; the mesh size and the percentage retained matter.

Bran binds water and physically interrupts the continuous gluten network that traps fermentation gas. Removing the largest particles may improve dough extensibility and loaf volume. It also removes some fiber, minerals, vitamins, and phytochemicals concentrated in the outer grain layers. The trade is real, but it need not be all-or-nothing.

Choose the method by the bread

Run a simple extraction test

1. Mill 500 grams of wheat berries at your normal setting.

2. Sift without forcing material through the screen.

3. Weigh the flour that passed through and the coarse material retained.

4. Calculate extraction: flour through the sieve ÷ total milled flour × 100.

Example: If 460 grams pass through from 500 grams, the practical extraction is 92%. Your sieve retained 8%.

Use this number as a shop note, not a laboratory claim. Moisture loss, material left in the mill, and particles clinging to the sieve make a home result approximate. Still, it is far more useful than saying “lightly sifted.”

Mesh size is not universal language

Sieve numbers can vary by standard and sellers sometimes use “fine,” “medium,” and “coarse” loosely. Rather than chasing one magic mesh, test the sieve with your own mill and grain. The useful sieve is the one that removes objectionably large flakes without leaving you with a bowlful of valuable grain material.

Do not press and scrape hard with a spoon. That changes the separation and can drive sharp particles through. Shake or stir gently, then weigh the result.

What should you do with the sifted bran?

The simplest choice is to soak it. Combine the retained coarse fraction with part of the recipe water and rest it until softened, then add it after the main dough has begun to develop. This keeps the whole grain in the loaf while reducing the dry, cutting quality of coarse bran. Because the bran-water mixture belongs to the formula, count that water in the total hydration.

You can also use the coarse fraction in muffins, crackers, porridge, granola, breading, or a sourdough starter feeding. Label and refrigerate it if it will not be used promptly; the germ-rich fraction has oils that do not keep like refined flour.

A sensible first trial: Bake the same familiar pan-loaf formula twice. Leave one batch unsifted. For the second, remove only the coarsest 5%, soak it, and return it after the initial rest. Keep every other variable the same. The side-by-side loaves will tell you more than a mesh-number debate ever will.

Common sifting mistakes

Trying to copy store-bought white flour

Commercial roller milling separates grain fractions through multiple controlled passes. A home mill and one sieve produce a useful high-extraction flour, not an exact duplicate of all-purpose or bread flour.

Discarding the retained fraction

If the purpose of milling is to use the grain well, throwing away bran and germ defeats much of the purpose. Plan its use before sifting.

Changing flour and hydration together

Sifted flour may absorb water differently. Keep a small portion of water in reserve and add it by feel after a rest. Record the final amount so the next bake starts from knowledge instead of guesswork.

Assuming finer always means better

Very fine flour can improve uniformity, but grain type, gluten quality, fermentation, hydration, and pan support still govern the loaf. The sieve is one wrench in the toolbox, not the whole hangar.
